AHCC® is obtained with an innovative process that involves the cultivation of shiitake mycelia in a liquid medium, allowing natural fermentation. During fermentation, enzymes hydrolyze some polysaccharides into low molecular weight (<5KDa>) alpha-1,4-glucans.
