This is pollen fermented under natural conditions, in the hive.
The bees bring the pollen to the hive and insert it into the honeycomb cell, where it combines with a little honey and various enzymes. The cell is then sealed with wax. Here, under the influence of microorganisms, temperature, and humidity in the hive, the pollen undergoes a series of biochemical transformations, becoming, after three months of natural fermentation, pasture.
