But what is turbinado sugar? While refined white sugar can be derived from sugar cane or sugar beets, turbinado comes exclusively from the first pressing of sugar cane. The cane juice is then boiled just once. (Unlike refined granulated sugar, which is boiled multiple times to rid it of any residual molasses and, with it, any brown color.) The boiling process causes the sugars to crystallize, and those crystals are then spun in a centrifuge — or turbine, if you will — to remove excess moisture. The result is turbinado sugar.
Turbinado crystals are coarser than refined white sugar, which is why they make an ideal finishing sugar. Much like how the flaky, salty pyramidal structure of Maldon salt adds texture to a dish rather than melting into a salty nothing, turbinado granules contribute a contrasting, crunchy exterior to Salted Butter and Chocolate Chunk Chocolate Shorty or a crackly crust to an Earl Grey Tea cake.
