Organic maple syrup, 250 ml, La Finestra sul Cielo
Maple syrup is obtained from the sap of the tree.
The sap is harvested from the end of February to the middle of April, from trees at least 30 years old, directly in barrels. For 1 liter of syrup you need 40-50 liters of maple juice. It is a unique product because the taste and color of the syrup varies during the seasons.
As the season progresses, the fructose and glucose content of the maple syrup increases, while the sucrose content decreases slightly. Like the sugars, the other natural components present in maple sap also change during the seasons (amino acids, minerals). These changes in the composition of the maple sap lead to a change in the color and taste of the maple syrup.
At the beginning of the season, the syrup is generally clear and the taste slightly sweet (Extra-Clara, Clara or Medium C or D class syrup). This is the moment when the trace elements are present to the greatest extent in the syrup. Its taste is more intense.
The syrup is grade C (obtained at the end of the harvest, more concentrated in minerals), rich in three essential elements such as: calcium, iron and vitamin B1. It contains a surplus of magnesium, phosphorus and vitamins, especially vitamin B2. It is a natural syrup (obtained through a non-chemical transformation process), it is not refined and that is why it is rich in minerals and has a slightly sweet taste.
Maple syrup is frequently used as a sweetener in various pastry products, fruit compotes, candied fruits, fruit salads, in muesli, yogurt.
