Cream of tartar is extracted from grapes or tamarind (so completely natural) and is used in combination with baking soda to get the dough to rise.
Cream of tartar is "activated" in the presence of water: in this way, the mild acidity develops, by reaction, with carbon dioxide and therefore allows the cakes to rise. It is also a great substitute for those with yeast intolerances. It is the most widely used yeast in vegan pastry products, because in classic yeasts there may be stabilizers of animal origin.
