Tapioca is the flour obtained from the root of the plant of tropical origin, called cassava.
It does not naturally contain gluten. During the Second World War, many refugees from Southeast Asia survived only on tapioca. It is rich in fiber, vitamins B and C. It is recommended due to its antiseptic and cicatrizing qualities on the digestive system, constituting a protector of the digestive mucosa.
Tapioca flour is used to give consistency to dishes, soups, jams, but also for baked doughs.
