DescriptionUmeboshi vinegar is made by straining the acidic, salty liquid produced by ripening umeboshi plums. It is used like regular vinegar, but is already salty: to season a salad, simply add a little oil. Ohindo vinegar is made from the same Japanese ume plums used to make umeboshi. Fermented with salt and shiso leaves in wooden barrels, according to the traditional method, the ume plums produce this acidic, salty condiment.

How to use
Use with oil to flavor salads, instead of vinegar and salt. Vegetable Dressing: Combine one tablespoon of tahini (sesame paste) with two teaspoons of Ohindo Acidified Salt and mix well. Use to flavor vegetable and seaweed dishes.
