Coconut sugar is obtained from the nectar of coconut palm flowers.
In Asia it has been used for thousands of years replacing brown and white sugar. The sweet nectar is evaporated at low temperatures until it becomes a thick caramel, then dried and ground into a crystallized powder. This traditional method ensures the preservation of the content of vitamins and minerals such as: Vitamins B1, B2, B3, B6, vitamin C, Potassium, Magnesium, Zinc, Iron, and a large part of the 16 types of amino acids.
It has a low glycemic index (35) compared to other sugars, helping to stabilize blood sugar so it can be consumed by diabetics (in moderation, of course) and those on a diet who want to use a sweetener with few calories, but with a pleasant, slightly caramelized flavor.
By simply replacing regular sugar with coconut sugar, you can achieve a faster metabolism, resulting in fat burning.
Coconut sugar can be consumed as a sweetener, added to coffee, chocolate, fruit tarts, ice cream and desserts, or used in cooking.
